Borgo Santo Pietro Relais: Assistant Restaurant Manager

We are looking for a passionate and enthusiastic Assistant Restaurant Manager for Borgo Santo Pietro, an award-winning five-star luxury boutique hotel located in the heart of Tuscan countryside, surrounded by a 300-acre organic farm, vineyards and wonderful gardens. The individual has a strong knowledge of restaurant operations and an understanding of what makes great customer service.

Main responsibilities: 
– Supervise kitchen and waiters and provide assistance. 
– Keep detailed records of daily, weekly and monthly costs and revenues.
– Ensure that the restaurant adheres to pertinent health and safety regulations.
– Calculate future needs in kitchenware and equipment and place orders as needed.
– Induct and mentor new staff members.
– Schedule shifts and assign tables to waitstaff.
– Assist guests in any request they might have.

Candidate profile:
– At least two years of previous experience in a similar role in luxury hotels is required
– Familiarity with restaurant management software. 
– Strong customer service attitude.
– A fluent level of English and Italian is requested.
– Knowledge of any other language is considered a plus.
– Knowledge of food & service is mandatory.

Borgo Santo Pietro Relais: Chef de Rang – Michelin Star Restaurant Saporium

We are looking for a passionate and enthusiastic Chef de Rang for our Michelin Star Restaurant Saporium at Borgo Santo Pietro, an award-winning five-star luxury boutique hotel located in the heart of Tuscan countryside, surrounded by a 300-acre organic farm, vineyards and wonderful gardens.

The Chef de Rang will work in our Michelin Star Restaurant Saporium, offering a unique farm-to-plate culinary experience. 

The individual will be responsible for delivering exceptional service and ensure a memorable dining experience for guests and as Chef de Rang in a Michelin-starred restaurant, you are responsible for ensuring smooth service and you will work closely with the restaurant manager and the sommelier to ensure that service runs smoothly, and guests are fully satisfied.  

Main responsibilities: 
– Welcome guests warmly, accompany them to the table and provide the menu, ensuring a memorable experience from the moment they arrive.
– Proven experience in a fine dining or Michelin star restaurant.
– Oversee a section of the dining room.
– Introduce the menu, describing each dish in detail and answering any questions guests may have.
– Coordinate with colleagues to ensure timely delivery of food and beverages, orchestrating service with precision and efficiency.
– Provide quality service in line with Borgo Santo Pietro’s standards.
– Take orders and provide recommendations when needed. 
– Assist guests in the wine’s selection to complement their meals. 
– Provide personalized service to enhance the dining experience.

Candidate profile:
– Fluent level of English and Italian languages is required.

We are looking for a passionate and enthusiastic Commis de Rang for Borgo Santo Pietro, an award-winning five-star luxury boutique hotel located in the heart of the Tuscan countryside, surrounded by a 300-acre organic farm, vineyards and wonderful gardens for our main Restaurant Trattoria and our Michelin Star Restaurant Saporium, Chiusdino. The individual will be responsible for setting up the general mise en place of the restaurant before guests’ arrival.

– Prepare tables and organize the restaurant&#39;s mise en place.
– Responsible of food pass areas between the dining room and kitchen to serve dishes
to tables.
– Clean equipment and tables.

Borgo Santo Pietro Relais: Commis Fermantation Lab

At Borgo Santo Pietro, our award-winning luxury retreat in the heart of Tuscany, we’re looking for a Commis to join our Fermentation Lab team. Here, you’ll collaborate with world-class chefs to create extraordinary culinary experiences for international guests.

Our 120-hectare estate, including 11 hectares of organic farmland, provides over 200 types of vegetables and 50 varieties of herbs used in the Fermentation Lab. The creations born here are featured in our Trattoria sull’Albero and Michelin-starred Saporium restaurant, which also holds the prestigious Green star for sustainability.

As part of the Fermentation Lab, you’ll join a close-knit team that thrives on collaboration, shared knowledge, and a strong dedication to our farm-to-table philosophy. This is more than a role; it’s an opportunity to craft innovative cuisine while honoring the rhythms of nature.

Your role in the kitchen:
– Assist in meal preparation, including washing, peeling, and chopping fresh produce and seasoning various types of meat.
– Plate and present dishes following the Fermentation Chef’s guidance.
– Monitor kitchen supplies, restocking as needed, and notify the supervisor when inventory runs low.
– Maintain a clean and sanitized workstation, performing basic cleaning tasks as required.

What we’re looking for:

The individual is responsible of managing restaurants’ reservations, assisting, greeting, and seating restaurant guests. He/she has to provide an enjoyable dining experience by ensuring that customers have everything they need.

– Take and manage reservations over the phone, by email or in person.
– Manage seating optimization.

Borgo Santo Pietro Relais: Chef de Partie

The individual will be responsible for running a specific kitchen section and prepare ingredients and cook them in that specific area.

– Prepare a particular kitchen station by bringing all food containers to that point in
the line.
– Assist the sous chef or chef in daily food preparation activities.
– Support the growth of commis de partie.
– Cook a specific portion of each plated meal.
– Assist with marinating, cutting and precooking foods.
– Ensure high-quality food production, preparation, and presentation.
– Perform cleaning duties and ensure that the work area is properly sanitized.
– Plate food creatively and maximise customer enjoyment.

Candidate profile:
